A mixture of fresh vegetable, feta cheese, kidney beans and some home-made creamy garlic herb dressing (Vegan). Filling, satisfying and last but definitely not least it’s healthy! I threw on some jalapeños to give it some kick.

Creamy Garlic Herb Dressing:
2/3 cup olive oil
3 Tablespoons water
2 Tablespoon lemon juice (Fresh lemon is the best)
1 tsp parsley (Optional)
1 tsp onion powder
1 tsp basil (I sometimes add extra)
4-5 Tablespoons nutritional yeast flakes
1 teaspoon salt
1 clove of garlic (I love garlic so I usually add an extra glove + some garlic powder)
Add all these ingredients in a blender then blend it up and voilà! You have a delicious, vegan and healthy salad dressing ready to go!
