Freshness.

A mixture of fresh vegetable, feta cheese, kidney beans and some home-made creamy garlic herb dressing (Vegan). Filling, satisfying and last but definitely not least it’s healthy! I threw on some jalapeños to give it some kick.

Creamy Garlic Herb Dressing:

  • 2/3 cup olive oil

  • 3 Tablespoons water

  • 2 Tablespoon lemon juice (Fresh lemon is the best)

  • 1 tsp parsley (Optional)

  • 1 tsp onion powder

  • 1 tsp basil (I sometimes add extra)

  • 4-5 Tablespoons nutritional yeast flakes

  • 1 teaspoon salt

  • 1 clove of garlic (I love garlic so I usually add an extra glove + some garlic powder)

Add all these ingredients in a blender then blend it up and voilà! You have a delicious, vegan and healthy salad dressing ready to go!
